The Super Bowl is upon us, which usually means lots of good food! If you are hosting an event or attending one, you may want to try this easy Sugar Cookie Cake.
It is not difficult to make, and starts with ready-to-bake sugar cookies for the crust!
I first saw this recipe last fall, and it used pumpkin sugar cookies for the crust, but I used football sugar cookies for a football season dessert, which makes it perfect for a Super Bowl party.

I’m a huge fan of cookies, and sugar cookie crusts for pretty much anything. :) I have used sugar cookie dough to make a cobbler-type dessert for the holidays, and it really is my preference over regular crusts.
For this recipe, I lined a springform pan with a design made from alternating football sugar cookies and plain sugar cookies. These are so easy to use.

Bake the cookies according to the directions, usually about 12 minutes. The cookies will look fluffy when they first come out of the oven, but will settle down as they cool.

While the cookie crust is cooling, you make the no-bake cheesecake filling. Place the filling on top of the cookies and allow everything to chill in the refrigerator while covered in plastic wrap for a minimum of three hours, up to overnight.
Finally, you make the whipped cream frosting and decorate the top of the cake with any remaining baked cookies.
As you can see from the side view, you have a sugar cookie crust, a cheesecake filling, and a cookie on top for each bite.

This dessert is so easy to make and a fun way to celebrate any event, thanks to the wide variety of themed sugar cookies available. You can change this dessert up for Valentine’s Day, Easter, Halloween, Christmas, or any other theme you want.
