One of the interesting developments during all our time at home has been how creative people have gotten with their food and drinks. Whipped coffee. Quarantinis. And now Mini Pancake Cereal has made an appearance.

Have you come across this yet? It’s made quite a splash on social media. I really wanted to try it, so the long Memorial Day weekend seemed like as good a time as any.

There’s nothing difficult involved. You just make your favorite pancake batter and dispense it in tiny bits, flip, and eat!

You can make your batter from scratch, or use your favorite mix. I use a mix, and like the Krusteaz brand.

Whatever batter you use, you will want to make sure it has a good consistency. You don’t want it too thick, as it is best to dispense it from a squeeze bottle.

You don’t want the batter to be too runny, as you are squeezing out small rounds of batter and if too thin, the little pancakes will all run together on the griddle.

So find that “Goldilocks” just-right consistency, and put the batter in your squeeze bottle. Here’s mine ready to go.

Just squeeze out little rounds of batter onto a griddle. They will spread a bit, so shoot for rounds no bigger than a dime. Butter can burn easily, so it is best to use oil on your griddle. I like olive oil.

Just let little bubbles form, as you would with larger pancakes, then flip them. I saw some people on social media using chopsticks to flip the pancakes, but I’m not very good with chopsticks, so that didn’t work too well for me. I switched to a small offset spatula instead.There are two ways to eat these little pancakes. One is in a bowl with syrup and butter, like you would larger pancakes. The other is as cereal, with milk.

I tried both ways, and if you wish to eat them with milk, I would suggest cooking the pancakes until they are crispy so that they don’t quickly become soggy.

I have to say I liked eating the little pancakes with the butter and syrup better than with the milk. But I think kids would love eating them as a cereal.

You could add all kinds of fun things, like sprinkles, chocolate chips, or candy. Hey, it’s the end times. Candy for breakfast is called for. 🙂
