Last week we made Candy Corn Rice Krispie Treats. Now that Halloween is over, you may have some leftover candy corn. What to do with that? Make Candy Corn Butterfinger Bites!

Candy corn is kind of a polarizing food. Most people either really love it or think they hate it. I personally love it. Too much. 🙂 For those who think they hate it, maybe this project will change your mind.

Candy corn goes really great with peanuts. I’ve mentioned before that if you like Payday candy bars, just mix some candy corn with peanuts in a bowl and eat them together. It tastes just like a Payday!

I saw a recipe on the Food Network website for making Butterfinger candy using candy corn. I love Butterfinger candy. Do you? I was intrigued so I had to try it. It doesn’t use very many ingredients and you may already have them all on hand.

Candy corn, dry roasted peanuts, peanut butter, and milk chocolate. That’s it!

The first thing you do is spray a square baking pan with a nonstick cooking spray and then line it with parchment paper.

Do you hate when parchment paper just rolls up and won’t stay where you want it? An easy fix is just to wad it up first and break its will to live. 🙂

Then it will stay wherever you want it.

Not pretty, but it works. The parchment paper will help you lift the candy mixture out of the pan easily once it sets up.

Then you melt the candy corn in either a double boiler or the microwave.

I used the microwave. If you never knew that candy corn is meltable, here it is:

While the candy corn is melting, chop the peanuts in a blender or food processor and measure out your peanut butter. You want to have everything ready when the candy corn is melted because it starts to set up FAST.

Add the chopped peanuts and peanut butter and start stirring quickly.

Once everything is well mixed, pour the mixture into your prepared pan. Spread it evenly and let it set up for about 30 minutes.

Once the mixture has set up, use a pizza cutter or knife to cut it into pieces the size of your choosing. I cut mine into bite-size pieces so that I can eat one without wrecking my low-carb eating plan. 🙂

Melt your chocolate in either a double boiler or the microwave and then dip the candy pieces in the chocolate.

Imagine taking a container full of these to work right after Halloween. Everybody loves THAT person. 🙂 Or surprise your neighbors with a treat.

These taste delicious and the flavor is EXACTLY like a Butterfinger. The consistency is not quite as crispy as a Butterfinger. These are a bit softer and chewy, which is kind of fun.

So if you thought you hate candy corn, hate to be the one to break it to you but if you like these, you like candy corn. 🙂
