Unless you don’t happen to have a TV or access to social media, you know that the Barbie movie finally hit theaters after we’ve been hearing about it for what seems like years. 🙂

Barbie-mania has taken over everything from clothing to jewelry to cocktails. I heard there is even a shortage of pink paint. That is a scary thought.

I was watching a local lifestyle show on TV last week and they did a whole segment on Barbie-themed cocktails. The one that sounded intriguing to me was one called a Malibu Beach Soda.

Barbie is all about Malibu and I figured this drink would have a beachy flavor, based on the name. It definitely does. It takes like vacation. 🙂

It’s very easy to make so I decided to whip one up this weekend. It’s still so so hot here in Texas, so any refreshing drink that suggests a beach getaway sounds good to me.

The ingredients in this drink are:

That’s it! Super easy. Malibu rum is clear and any Barbie drink has to be pink so that’s where the edible glitter comes in. I ordered some from Amazon and it worked like a charm.

Malibu rum has a coconut flavor and Elderflower has a delicate floral taste. The glitter does not add any taste to the drink.

I really like Elderflower liqueur and talked about it a couple of years ago as the flavor ingredient of the Hugo Spritz. I heard last week that the Hugo Spritz is the cocktail of the summer, so if you’ve been drinking those since I wrote about them, you’re already ahead of the game. 🙂

To make the Malibu Beach Soda, simply fill a tall glass with ice and add 1.5 ounces of Malibu.

Then add as much edible glitter to make the drink your preferred shade of pink.

Add 3/4 of an ounce of Elderflower liqueur.

Top up the drink with club soda.

You can even make the drink more Barbie-forward by garnishing the rim of your glass with pink sugar. Add a pink straw or even a little pink umbrella! You can be as subtle or not subtle as you want with the whole pink theme.

I added a little bit of the edible glitter to start, then added more to make the drink more pink. You can always add more.

(A little goes a long way. If you are having a gender reveal party for a baby girl, maybe you can use the rest for that!)


I stirred the glitter to mix it with the Malibu. Then I added the Elderflower liqueur and topped off with the club soda. Very refreshing, with floral and coconut flavors that are perfect for summer.

So pretty. And you just might need a cocktail when you get home from taking a bunch of girls to the Barbie movie. 🙂
